Blackberry & Goat Cheese Salad

This blackberry and goat cheese salad is fresh, light, and full of contrast. The sweetness of the berries pairs beautifully with creamy goat cheese and peppery greens, making it an easy yet elevated dish for lunch or entertaining.

Ingredients

• 3 cups rocket (arugula)
• 1/2 cup fresh blackberries
• 60g goat cheese, crumbled
• 1/4 cup pistachios, roughly chopped
• 1 tbsp olive oil
• 1 tbsp balsamic glaze
• 1 tsp honey
• Salt and pepper, to taste

Method

1. In a large bowl, add the rocket and gently toss to loosen the leaves.
2. Scatter over the blackberries, goat cheese, and pistachios, distributing evenly for balance in every bite.
3. In a small bowl, whisk together the olive oil, balsamic glaze, honey, salt and pepper until well combined.
4. Drizzle the dressing over the salad just before serving. Toss lightly to coat, being careful not to break up the goat cheese too much.
5. Serve immediately while fresh and crisp.
