2 May 2026Pastéis de bacalhau are crisp on the outside, soft and flavourful on the inside. Made with salt cod, potato and herbs, they’re a classic Portuguese favourite that’s simple, comforting and perfect for sharing.
Ingredients
- 250g salt cod (desalted)
- 2 medium potatoes, peeled and chopped
- 2 eggs
- 2 tbsp chopped parsley
- 1 small onion, finely chopped
- 1 garlic clove, minced
- Salt and pepper, to taste
- Vegetable oil, for frying
- Lemon wedges, to serve
Method
- If using salted cod, soak it in water for 24 hours, changing the water a few times to remove excess salt.
- Boil the potatoes until soft, then drain and mash until smooth. Set aside to cool slightly.
- Poach the cod in simmering water for 5–7 minutes, then drain, flake and remove any bones.
- In a large bowl, combine the mashed potato, flaked cod, eggs, parsley, onion and garlic. Mix until well combined and season lightly with salt and pepper.
- Shape the mixture into small oval fritters using your hands or two spoons.
- Heat oil in a deep pan over medium heat. Fry the fritters in batches for 3–4 minutes, turning until golden brown and crispy.
- Drain on paper towel and serve warm with lemon wedges.
These fritters are best enjoyed fresh and hot, with a squeeze of lemon to balance the richness. They’re simple, traditional, and full of flavour — perfect as a snack, starter or shared plate.
