Balsamic Grilled Flank Steak Caprese

Flank steak only needs to be quickly grilled. Marinading the steak overnight helps to bring out its flavour.



¼ cup balsamic vinegar

1tsp honey

¼ cup olive oil

¼ tsp salt

¼ tsp pepper

1tbsp Dijon mustard

1 large grated garlic clove

Steak Caprese

900g flank steak

1 cup diced buffalo or fresh mozzarella

2tbsp fresh basil cut into thin slices

2 cups cherry tomatoes


  1. Place all the marinade ingredients into a bowl and mix well. Marinade the steak in half the marinade mixture in the fridge overnight.
  2. Preheat the grill to medium-high heat. Shake excess marinade off the steak and grill for three to five minutes on each side until it reaches the desired level of doneness. Allow to rest for five minutes.
  3. Grill the cherry tomatoes for five minutes until slightly charred, or heat a skillet and blister them on a stovetop.
  4. Slice the steak against the grain to ensure it tastes tender, and serve topped with the cherry tomatoes, mozzarella, basil, and remaining marinade.
