Chargrilled Haloumi with Strawberry Salsa
Make the most of the season’s fresh, juicy strawberries with this easy and tasty recipe which makes an excellent starter.
500g haloumi sliced into 5mm thick pieces
250g finely chopped strawberries
2tbsp lime juice
1 finely chopped, deseeded red birdseye chilli (optional)
½ finely chopped small red onion
¼ cup coarsely chopped coriander
2tbsp fresh mint finely shredded
11/2tbsp olive oil
- Mix honey, strawberry, lime juice, chilli (if using), mint, coriander and onion with 1 tablespoon of the oil in a medium bowl. Season to taste.
- Heat a chargrill or barbecue grill on high and lightly brush the haloumi with the remaining olive oil. Cook haloumi in batches for one minute on each side or until charred. Place haloumi on a serving platter, top with the strawberry mixture and serve straight away.
Serves 8 as a starter
