Easter Bun Loaf
It isn’t Easter without a hot cross bun, and this easy loaf is made for sharing.
Ingredients
40g melted butter
160g sultanas
1 egg yolk
2tsp dried yeast
21/2 cups plain flour
5tbsp caster sugar
250ml warm milk
2tsp cinnamon

80ml water
75g plain flour
Instructions
- Mix together two teaspoons of the sugar, yeast and milk and set aside five minutes until bubbles appear.
- Place remaining sugar, cinnamon, butter, flour and egg yolk into a bowl. Add the yeast and mix until you have a smooth dough. Add sultanas and knead on a floured surface for five minutes.
- Place the dough in a greased 20 cm x 10 cm x 7 cm loaf tin. Leave covered with a tea towel in a warm place for an hour until doubled in size.
- Preheat oven to 180°C.
- Make the cross by whisking together the water and flour and pipe onto the uncooked loaf. Bake for 40 minutes until golden.
- Make a glaze by placing two tablespoons of apricots jam and a tablespoon of water in a saucepan over low heat. Brush the warm jam mixture over the loaf.
