Easy mid week San Choy Bow

This meal takes just minutes to prepare and cook which is perfect when you want something quick and tasty.


500g  Chicken Mince

½ cup roughly chopped cashews

2 finely sliced spring onions

4 cos lettuce leaves

½ medium lime, sliced into wedges

1 medium finely sliced red chilli


  1. Heat a frying pan on a high heat and toast cashews for approximately two minutes until fragrant. Add spring onions and pork to thoroughly warm through for approximately five minutes.
  2. Divide the pork between the lettuce cups and garnish with more spring onion if desired, fresh chilli. Serve with fresh lime wedges.
