Easy mid week San Choy Bow
This meal takes just minutes to prepare and cook which is perfect when you want something quick and tasty.
500g Chicken Mince
½ cup roughly chopped cashews
2 finely sliced spring onions
4 cos lettuce leaves
½ medium lime, sliced into wedges
1 medium finely sliced red chilli
- Heat a frying pan on a high heat and toast cashews for approximately two minutes until fragrant. Add spring onions and pork to thoroughly warm through for approximately five minutes.
- Divide the pork between the lettuce cups and garnish with more spring onion if desired, fresh chilli. Serve with fresh lime wedges.
