11 December 2024This Cod in a Tomato Lemon Butter Sauce is a light yet flavourful dish that brings together tender fish, zesty lemon, and a rich butter sauce with a touch of freshness from ripe tomatoes. It’s quick to prepare and perfect for weeknight dinners or entertaining.
Ingredients:
- 4 cod fillets (about 150 g each)
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 3 medium tomatoes, diced
- 2 garlic cloves, minced
- 1 lemon (zested and juiced)
- 1/4 cup white wine (optional)
- Salt and pepper, to taste
- 1 small handful fresh parsley, chopped
Method:
- Prepare the fish. Pat the cod fillets dry with paper towels and season both sides with salt and pepper.
- Sear the cod. Heat the olive oil in a large skillet over medium heat. Add the cod fillets and cook for 3–4 minutes per side, or until golden brown and just cooked through. Remove the fish and set aside.
- Make the sauce. In the same skillet, add the butter and minced garlic. Sauté for 1–2 minutes until fragrant. Stir in the diced tomatoes and cook for 3–4 minutes, allowing them to soften.
- Add lemon and wine. Pour in the lemon juice, zest, and white wine (if using). Simmer for 2–3 minutes to reduce slightly. Season the sauce with salt and pepper.
- Combine and serve. Return the cod fillets to the skillet and spoon the sauce over the top. Cook for 1–2 minutes to heat through. Garnish with chopped parsley before serving.
