Grilled Chicken with Pepperoncini Garlic Butter

Grilled chicken is a versatile and delicious dish, but when paired with a zesty pepperoncini garlic butter, it becomes something truly special. The tangy heat of the pepperoncini peppers combined with the richness of butter and the aromatic kick of garlic makes this a mouthwatering meal that’s perfect for any night of the week. This recipe is quick to prepare and sure to impress.

 

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 100g unsalted butter, softened
  • 3 cloves garlic, minced
  • 60g pepperoncini peppers, finely chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon lemon zest
  • Juice of 1/2 lemon

Method:

  1. Preheat your grill to medium-high heat. Season the chicken breasts with salt and pepper, then drizzle with olive oil to coat evenly.
  2. In a small bowl, combine the softened butter, minced garlic, chopped pepperoncini peppers, parsley, lemon zest, and lemon juice. Mix until well combined and set aside.
  3. Grill the chicken breasts for 6-7 minutes per side, or until they reach an internal temperature of 75°C and are cooked through. The chicken should have nice grill marks and be slightly charred around the edges.
  4. While the chicken is grilling, place the pepperoncini garlic butter mixture onto a piece of baking paper or plastic wrap. Roll it into a log shape, then place it in the fridge to firm up slightly.
  5. Once the chicken is cooked, remove it from the grill and let it rest for a few minutes.
  6. Slice the pepperoncini garlic butter into rounds and place a slice on top of each chicken breast while they’re still warm, allowing the butter to melt over the meat.
