5 Ways to Handle a Knocked-Out Tooth

Ingredients:
- 4 veal shanks with marrow (approximately 1.5 kg)
- Salt and pepper to taste
- 1/4 cup plain flour
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 carrots, diced
- 2 celery sticks, diced
- 4 cloves garlic, minced
- 250 ml dry white wine
- 400g can crushed tomatoes
- 250 ml beef stock
- 1 bay leaf
- 2 sprigs fresh thyme
- Zest of 1 lemon
- 2 tablespoons fresh parsley, chopped
Method:
- Prepare the Veal Shanks: Season the veal shanks with salt and pepper, then dust them lightly with flour. Heat olive oil in a large heavy-based pot over medium-high heat. Brown the shanks on all sides, then remove and set aside.
- Cook the Vegetables: In the same pot, add the chopped onion, carrots, and celery. Cook until softened, about 5 minutes. Add the garlic and cook for another minute.
- Deglaze and Simmer: Pour in the white wine, scraping up any browned bits from the bottom of the pot. Let it simmer for a couple of minutes, then add the crushed tomatoes and beef stock. Stir to combine.
- Add Herbs and Meat: Return the veal shanks to the pot, nestling them into the liquid. Add the bay leaf and thyme sprigs. Bring to a simmer, then reduce the heat to low. Cover and cook for 1.5 to 2 hours, or until the meat is tender and falling off the bone.
- Finish and Serve: Remove the bay leaf and thyme sprigs. Sprinkle the lemon zest and chopped parsley over the top before serving. Serve the Osso Bucco with risotto, polenta, or mashed potatoes to soak up the delicious sauce.
